Wapiti Ways elk jerky is slices of naturally raised, Alberta ranched elk, prepared using our own unique recipe, then dried and smoked. Jerky has become a very popular snack in North America with its natural taste and low fat and calories.
Jerky was first introduced by the South American native tribe called the Quechua. The Quechua were part of the Inca empire. They called their Jerky Ch'arki, a name that can still be found on Spanish jerky today. The Quechua sliced their meat and pounded it between stones before cooking and drying it.
North American Indians developed a similar method of preserving their meat and produced a product called pemmican. Pemmican was made using venison or buffalo meat dried slowly and pounded into powder. Wild berries and hot fat were then added to the meat and it was all placed in waterproof hide casings.
Early hunters, trappers, and settlers quickly adopted the native techniques of cutting and pulling meat, salting it, and hanging it over branches to let Mother Nature dry it with sun and wind. Over time drying methods changed. To speed the process up people began drying the jerky in smoke huts over fire. The smoke would cure the meat, imparting its own unique flavour to it, and the heat from the fire would dry the meat. Not only was this process faster, but it required much less salt making the jerky more palatable.
Through time and experimentation unique recipes for jerky were developed. The smoke from different woods imparted its own essence to the jerky, and marinating the meat in different combinations of preserves, spices, herbs, added its own unique tastes. There was a time where every family had their own jerky recipe, often handed down over generations, and often well guarded like all family treasures.
Today you can find some of these well-guarded family recipes on the store shelves. Pemmican is there, only now it is called "kippered." It is pemmican though, a chipped and formed product placed in a casing and often confused these days with jerky.
